LOOKING TO PUT SOME PIZZAZZ IN YOUR HEALTHY HUMMUS RECIPE? Try Dr. Z’s Zucchini Hummus

I am a HUGE HUMMUS FAN! After all, hummus is a tasty, healthy, snack food. But, I’m also a bit of a hummus snob too. Other than the ROOTS brand that is local to the Carolinas, I really don’t like store-bought, pre-made varieties. That’s why I’m always looking for healthy hummus recipes to make at home!

Another thing I’m not a huge fan of… Zucchini. I was actually traumatized by zucchini when I was a child – LOL:) It was the only thing that would grow in my parents’ Southern California garden for some reason. And boy did it grow! Those green squash grew huge!

To give my parents credit, they really did try to give as much of it away as possible. But, year after year we had zucchini in everything. The zucchini bread was okay, but in pancakes? Really mom? 🙂

So I was a bit skeptical when I saw Dr. Z’s Zucchini-based healthy hummus recipe come in this month. But, as I said, I’m always on the lookout for different varieties of healthy hummus recipes. And my-oh-my this one is REALLY GOOD! I would have asked her for a different recipe if it hit my yuk-factor 😉

Definitely give this healthy hummus recipe a try!

Dr. Z’s ZUCCHINI HUMMUS

Ingredients:

2 medium zucchini

¾ cup tahini

  • As you know, here at PLW we recommend the highest quality organic products. This TAHINI fits the PLW bill!

⅛ cup olive oil

  • Again, my being a bit of a food snob comes in here… but hey, I’m Italian! I have to be snobby about Olive Oil! I’m also a California native and ONLY use the CALIFORNIA OLIVE RANCH OLIVE OIL! I have used it for years and it is by far the best olive oil I have found outside of the small-batch olive oils in Italy.

 ¼ teaspoon cayenne pepper

 5 cloves  garlic, minced

1 teaspoon paprika

½ cup fresh lemon or lime juice

1 teaspoon ground cumin

¾ cup sesame seeds

Sea salt and pepper to taste

  • Try HIMALAYAN PINK SALT or CYPRESS FLAKE SALT. I find that with both of these, a little bit goes a long way in flavor. I don’t know why it’s different from normal table salt, but that’s what I seem to taste.

INSTRUCTIONS

1.   Place all ingredients in a high powered blender.

  • I love my Nutribullet! Mine is super old, but still going strong! #bestblenderever

2.   Blend on high until smooth.

3.   Serve immediately with cut veggies
